Secrets of Sliced Vegetables

Spring Vegetable Tian
- 3 carrots
- 2 onions
- 1 yellow squash
- 1 zucchini
- 1 bell pepper
- ½ c parmesan cheese
- 3 T olive oil
- 2 T butter
- ½ tsp thyme
- Salt and pepper to taste
- Preheat oven to 350.
- Slice all vegetables super thin.
- Toss in olive oil, salt, pepper and thyme.
- Arrange in round baking dish alternating vegetables until all are used and arranged into a circle pattern.
- Cut butter into small pieces and arrange over top and sprinkle with parmesan cheese.
- Bake until vegetables are tender, about 45 minutes.
