Spring Vegetable Tian

This beautiful dish is hearty, healthy, and easy to customize with whatever seasonal vegetables are available

Ingredients

Ingredients:

  • 3 carrots
  • 2 onions
  • 1 yellow squash
  • 1 zucchini
  • 1 bell pepper
  • ½ c parmesan cheese
  • 3 T olive oil
  • 2 T butter
  • ½ tsp thyme
  • Salt and pepper to taste

Instructions

Directions:

  • Preheat oven to 350.
  • Slice all vegetables super thin.
  • Toss in olive oil, salt, pepper and thyme.
  • Arrange in round baking dish alternating vegetables until all are used and arranged into a circle pattern.
  • Cut butter into small pieces and arrange over top and sprinkle with parmesan cheese.
  • Bake until vegetables are tender, about 45 minutes.
