Pork Stuffed Zucchini Boats

Ingredients

  • 1/2 c minced pork roast
  • 1 tsp dill
  • 7 hot peppers
  • 2 med Zucchini
  • 1 c cabbage
  • 2 Carrots
  • 1/2 onion
  • 1/2 tsp salt/pepper
  • 1 Garlic
  • 3/4 c Parmesan
  • 8 oz cream cheese

Instructions

  • Cut peppers and zucchini in half
  • Scoop out the insides of peppers and zucchini
  • Shred carrots, cabbage, onion, pork roast, garlic
  • Add veggies, dill and salt to cream cheese
  • Fill the peppers and zucchini
  • Top with parmesan cheese
  • Cook at 350 degrees for 45 minutes
