Spring Vegetable Tian
This beautiful dish is hearty, healthy, and easy to customize with whatever seasonal vegetables are available
- 3 carrots
- 2 onions
- 1 yellow squash
- 1 zucchini
- 1 bell pepper
- ½ c parmesan cheese
- 3 T olive oil
- 2 T butter
- ½ tsp thyme
- Salt and pepper to taste
Preheat oven to 350.
Slice all vegetables super thin.
Toss in olive oil, salt, pepper and thyme.
Arrange in round baking dish alternating vegetables until all are used and arranged into a circle pattern.
Cut butter into small pieces and arrange over top and sprinkle with parmesan cheese.
Bake until vegetables are tender, about 45 minutes.
