Autumn Butternut Squash Soup

Butternut squash soup is a warm, soothing comfort dish perfect for a cool, crisp autumn evening.


  • 2 qts chicken stock
  • 1 small onion cubed
  • 1 large butternut squash cubed
  • 1 clove garlic crushed
  • 4 stalks of celery finely chopped
  • ½ tsp dried thyme
  • Salt and pepper to taste
  • 2 T olive oil
  • ½ head cauliflower chopped into bite sized pieces
  • 8-10 large kale leaves stripped off the stems and chopped


  • Place olive oil in the bottom of a large stock pot and add onions and celery.
  • Sweat on low heat until translucent.
  • Add squash, stock, thyme, salt and pepper.
  • Cook until squash is fork tender.
  • Add cauliflower and cook until tender. Add garlic.
  • Using and immersion blender, process soup until partially smooth but still has some chunks remaining.
  • Add kale and cook until wilted.
